Creamy Lemon Bars
perfect for a hot summer day, especially straight from the fridge
Hi guys! I hope you’re having a good Saturday. Here in the UK it’s currently bank holiday weekend and we’ve somehow been blessed with actual summer weather for once — blue skies, long warm evenings and temperatures getting close to 30°C. Everyone’s outside having barbecues, sitting in gardens and trying to enjoy every second of it while it lasts. So honestly, this felt like the perfect time to finally share this lemon bars recipe. (And I know how long a lot of you have been waiting for this one)
I feel like a few years ago I would’ve never chosen a lemon dessert over chocolate. But lately I’ve been fully obsessed with citrus, especially desserts that are meant to be eaten straight from the fridge on a warm day. There’s just something about that cold, creamy, bright lemon flavour that feels so refreshing in hot weather.
These lemon bars are much lighter and easier than cheesecake, but still have that soft creamy texture that almost melts when you take a bite. The filling is super smooth, silky and intensely lemony without feeling too heavy, while the buttery biscuit base adds the perfect amount of crunch underneath. And the softly whipped cream on top balances everything out so well, especially the sweetness and sharp citrus flavour.
I also think this is one of those desserts that somehow tastes even better a few hours later once everything has properly chilled and set in the fridge. The texture gets creamier, the lemon flavour becomes brighter and the whole thing just feels incredibly fresh straight from the fridge. And if you slice them with a hot knife straight from the fridge, they come out so clean and pretty which honestly makes them perfect for summer dinners, garden parties or bringing out for guests after a barbecue.
I’ve also tested these with lime before and they work beautifully that way too, so you can absolutely play around with the citrus depending on what you feel like making.
Anyway, definitely one of my favourite things to keep in the fridge lately, and exactly the kind of dessert I want to eat all summer long.
